It may seem weird but I really find Oliver Sacks quite interesting, a chemist/neuroscientist that has written many books including, The Man who Mistook his Wife for a Hat and Awakenings. He often deals with people with disabilities that have special or heightened abilities. He is a must read for anyone that is interested in psychology and the workings of the brain.

You dont need to be any good at science to write an interesting book.

You need to specify your criteria for "best". Experimentalist, theorist, self-publicist etc.
