Food Recipes

I figured that I would create this thread to share food recipes.

Kriswest I know you have some to share.

In the coming days I am going to make my infamous fiesta stew.

It comprises of beef, taco seasoning, sour cream, shredded cheddar cheese, chipolte sauce, corn, and pinto beans. Yum!

Anybody else got any food recipes they like?

A favorite of mine is roasted tomato soup, Roma tomatoes halved drizzled with olive oil, salt and pepper then baked in the oven until just starting to blacken… take them out and add them to broth with onions, garlic, thyme, oregano, cayenne pepper, 1 large can crushed or diced tomatoes and 1 small can tomato paste. Mix well, bring to boil then simmer for 30-60 min. You can purée if you like, but I don’t.

That sounds superb. Add some grilled chicken marinated with all of that and then you got yourself a culinary treat.

Hon, my family calls me the queen of depression era cooking. I can take minimum and make it maximum in amount and taste, but, I don’t use recipes I use my senses. I keep certain inexpensive ingredients in stock. Spices can make all the difference. A bit of bread, tomatoes, cheese, a bit of meat or eggs, onion canned shrooms, etc. Can make a very satisfying filling meal with the use of a skillet. I am a nail soup cook.
Tonight I will be working with chops, pasta and green beans as the basics. Not a damn clue yet how.

I forgot that you also should add a good amount of fresh basil, too.

Well, come on Kriswest, don’t be shy. Share some of your food recipes with us.

Basil is always a good seasoning on anything.

Ok but, its budget cooking to fill stomachs as healthy as possible, nothing fancy.
Tonight
1 1/2 lbs of chuck roast cut into bite sized pieces and cut to make the pieces tender.
1 bag sugar snap stirfry vegies
4 small potatoes wedged into 1/4ths
3 cans inexpensive mushroom steak sauce
1 onion rough diced
2 boxes of Jiffy cornbread.
Combine all except cornbread, in a cast iron dutch oven. Add Weber’s Burgandy beef spice, salt and pepper to taste. Simmer until beef is cooked through and tender. Oh yea to make this quick you microwave the potatoes til they are almost cooked.
Bake your cornbread in a well seasoned cast iron skillet.
When both are done you cut the corn bread into preferred sized slices. Split the slice open, plate it or in a bowl, then ladel the beef mixture over it. Serve a fresh salad as a side. If you microwave the potatoes first it also keeps the vegies crunchy, this is preferred here. It takes less than an hour to make. To feed three adults it costs less than 5$ per person. A hearty meal. Plus one or two leftover servings.

That sounds good. Would you ever substitute the potatoes with another vegetable?

Butternut Squash soup.

Peel and seed 1 large butternut squash. Cut squash along with 2 onions and 2 apples (tart or sweet, your preference) into 1-inch pieces, drizzle with olive oil, salt and pepper and roast together at 425 for 35 minutes. While roasting, simmer 4-5 cups of homemade chicken broth. When done roasting put the squash mix into the broth on medium-low heat and puree well. Stir in extra pepper to taste along with 1 tsp cumin.

Garnish with heated dried cranberries and/or pecan pieces, may also drizzle on some honey or maple syrup as well for extra sweetness.

Yea Ty, actually I would, turnip, Jicama(not sure of the spelling on that one). There are other options. Potatoes were on hand. Any decent tuber even carrot or mild to medium radish to taste. Spice the mixture to compliment any flavor. I may sound like a commercial but, the best seasonings I have tasted are Weber’s and McCormick Grillmates. I have tried alot over the years. These two are outstanding and inexpensive , relatively. Try one or two. You might be pleased. The meat rubs are a favorite.

Going to make my infamous hot sauce boneless grilled chicken breasts tomorrow night.

Pretty standard really. Take boneless chicken breasts and oven bake them after you marinate them with buffalo hot sauce. You can also use Tobasco sauce if you’re going for a extra spicy sort of flavoring.

Tabasco Sauce: Vinegar, red peppers and salt.

That would definitely go well with the grilled chicken. Especially the red peppers.

Are we talking red bell peppers or chili peppers?

Why not add both?

As long as its not those horrific tiny peppers they put in Asian food. I can handle heat easily but, those are for people that love pain. They make any other pepper mild by comparison. My only time I ate one was the last. Christ I swear I had burn blisters in my mouth. My friend of course found it hilarious. . I can eat any other pepper and enjoy it. But, that is hellish.

In England (a lot of people love thier chillies here), we have a lot of scotch bonnet chillies, which are far hotter than the birds eye chilli peppers that I think you’re talking about. I make chilli with them, and everyone sits around sweating, noses running, eating it. mmmmmm.

Recipe? Hmmmm. I don’t really cook to recipes anymore either, a bit like kris. Mainly stir fries, curries and fish.

For a simple curry: onions, garlic and chillies on a high heat, add meat (I use goat but any red meat will do) and brown, add garam masala (freshly ground from whole spices if possible) and fry for about 45 seconds until it has a strong smell, add about half a cup of stock and some fresh tomatoes cut in half, and anything else you want to put in it (pumkin or butternut are in season atm, potatoes are fine, any kind of beans etc), and add paprika and chilli powder. Simmer on very low heat for about until most of the water has gone and the tomatoes and other veg are soft (30 mins or ).Turn off heat and add a tonne of fresh corriander (and maybe some chopped up spinach too). serve with bread (any - I use white crusty bread or flatbreads, but its good with wholemeal too).

I see you had a run in with Thai food.

It’s not for everybody. As for myself I really like spicy food.

Spicy is great but, when heat is blocking flavors then it is just stupid. Pepper heat should enhance , compliment, not overwhelm.

Nah, give me a vindaloo any day. If you aren’t sweating by the third bite, it isn’t spicy enough!

Rofl OK, but have you considered you might have burned the crap out of your taste buds and so need that heat for taste??? It does happen. After that everything else is blandish.
