Plant-based diet

I have been doing an exclusively plant-based
diet since 2001.
Before that, I was seafood vegetarian since
1983.
It’s crazy.
I’m stronger and more flexible now than when
I was 20. ALL my health issues of every
kind are GONE.
Totally recommended for anyone on the
downhill slide, health-wise, as I was.

Caldwell Esselstyn, above, cures heart disease
at his clinic, where the diet is actually quite a bit
stricter than mine (no processed oils, plants)

It’s totally crazy- I can run, again.

Just gotta pass it on- hard to do in this day
and age, but slowly getting easier to be vegan.
It WORKS

My pelvis was retroflected, and, like
most people, I didn’t even know it.
Then, 5 years after going completely
vegan, my pelvis clicked back to
where it used to be, causing me
to have to stand straighter in order
to keep my balance- thus causing my
back to straighten joint by joint.
When my backbone straightened,
it opened my ribcage back out, and my
pot belly disappeared.
When the arch returned to my lower
back, it seemed to lift my torso up
and away from my hips, and my
‘love handles’ are gone.
It’s definitely an experiencee!
It’s like being born again physically.

Carbs/sugar, even from fresh fruits and vegetables, make my sinusitis worse.

How long have you ever followed a vegan diet?

6 months, however, I didn’t follow it religiously, occasionally (once a week) I ate fish or poultry. I was, however, eating fuck loads of sea salt at the time, I replaced sugar addiction with fat and then fat with salt, maybe that was messing my sinuses up during my vegan phase, but I doubt it. Now I never use condiments in my home-cooking, no salt, no sugar, no butter, no oil, not even herbs and spices, I eat natural food, plain. Grains really screw up my sinuses, refined or otherwise, and regardless of whether I’m eating red meat or not, fruits and starchy vegetables hurt my sinuses. But it’s hard not to eat them, or to minimize them, as I no longer drink coffee, I need something to pick me up before/during work. If I minimize my fruits and starchy veg to 800 calories a day or less, my sinuses heal rapidly, brain fog and other ailments begin to recover, but this is exceedingly difficult to do, and occasionally I fuck up and eat junk food, again, worsening my sinuses. My nose has been broken, some people tell me I may need surgery, but I wasn’t always this way after my nose broke, it became worse and worse over the course of many years, and I fear surgery. My sinusitis robs me of my brain power, the pressure messes up my head, it’s chronic, terrible.

I don’t smoke by the way, or own pets.

I’m like the opposite of a vegetarian. I don’t like lettuce or tomatoes or much anything else in that category other than potatoes and maybe corn. I’m certainly not a health nut, or anything like one and I will probably die in my 50s.

I don’t like vegetables either, and have resumed a more moderate, omnivorous diet. I eat a lot of fruits, meats and potatoes, but hardly any vegetables. There’s no guarantees in life, I’ve heard of vegans dying in their 40s and drinkers, smokers and carnivores dying in their 90s. However, I do believe you can increase/decrease your odds of getting ill. It’s about moderation, vegans are too extreme. Humans are omnivores, we have canines, our stomachs are more similar to dogs and cats than they are to goats and sheep. Meat, especially organ meats, are far more nutritious than vegetables. I think the paleo diet is a superior diet, from my experience and research, I try to follow it, but I throw in lot of beans, potatoes and even a little junk food every now and then. Nothing in excess, I think is key. Take it from someone who’s tried all sorts of extremes.

However, some people can’t or shouldn’t eat much, if any dairy and wheat.

Also, every body’s different.

Find out what works for you.

The most important thing is experimentation.

What does this diet consist of?
I’m always worried that vital stuff is being left out.

Yeah, it takes attention.
For years, I’ve supplemented with Ensure, which
unfortunately uses whey, but which also has all the
vitamines and minerals I need. That way, I
don’t have to worry too much.

Before I started, I read a few books on it, and
took notes.

Now there are places like thriveforward.com
and there are clinics like Caldwell Esselstyn’s
that provide help and recipes

I no longer supplement with Ensure.
I mean, you don’t have to supplement at all, if you
do it correctly, but I get a vegan protein supplement
at Shopper’s Drugs called “vega one” and make a
smoothie out of it- apparently it also contains probiotics
as well as all the vitamines and minerals.
I blend it with soy milk and a banana.
I’ve only been trying it for a month or so,
but I use this kind of thing becausr I eat like a bachelor.

Any one plant is an incomplete protoein. We need 6 essential
amino acids in our food all at the same
time in order for our body to make protein,
and no single plant has all six. That’s
why people say plants aren’t proteins. They
aren’t COMPLETE proteins

But, if you take two different plants that, together,
have all six amino acids, and eat them in the same meal,
then you have a complete protein. These
are called COMPLEMENTARY plants.

Examples of complementar plants: wheat and peanuts, rice and beans (or any legume)

For instance- I have cooked lentils, like, never.
But, a number of months ago I found these red lentils
that you don’t have to do a million things to- you
just have to boil them for half an hour.
So, I put them on the boil.
Then I put some rice together that takes 15 minutes
and got it going.
Then, when both were done, I drained the lentils and
dumped them in with the rice, and dumped in
a can of spiced stewed tomatoes, and threw in a
teaspoon of curry, and stirred it and heated it until
it was bubbling and steaming.
Then, I put guacamole all over a piece of toast, like, really
thick, and put it in the bottom of a big bowl. Then
I filled the bowl.

Awesome!

And pure protein, with the rice and lentils together.

I follow a Paleo eating plan… so no legumes, dairy or grains… although I do include potatoes and peanuts in my diet because of necessity and convenience

No dairy is a good idea.

That is not a good thing to do as you are losing most of the flavor and ncessary ingredients too.
The right way is to put just enough water while boilng as to have right consistency, so there would not be any need to drain.

In general, water should be 2 - 3 times of the volume of lentels.
Though, it varies, and depends on what lentels are you using and whether those are soaked in the water or not.

Secondly, there is no need for any third thing as merely lentels and rice are enough. But for that, one must know how to cook lentels properly.
For that, the lentels should be tempered.

For tempering, put a pan on the high heat, put some oil and let it heat. Then put some cumin and musterd seeds and let them cracle, now add some finely cut onion, garlic and ginger. Put some salt and let the onions become golden, add some finely sliced tomatos and let them cooked. Now add a little of turmeric power, a pinch of Asafoetida powder, some coriander power and red/black chili power to taste.

Allow this to burn and turn slightly black and add cooked lentels immediately. The pan should be so hot while mixing that it should sizzle as that gives the smokey flavor. And, the lentels are done. Now, you can have rice with this alone.

The process is looking complicated but it is not and would not take more than five min.

Hi Sanjay
Sounds great!
My only comment: frying is not a good idea unless you
use an oil with a high smoke point.
If an oil gets to its smoke point, it begets transfats.

Grapeseed oil is what I use.

Ditto for deep fry, and don’t use the oil very many times.

Helper,

Grapeseed oil is not common in India so i cannot say anything about how it tastes.

We generally use vagetable oils or mustard oil here and both of them have quite high smoking points.

Secondly, it does not matter much because a very less quantity of oil is reaquired for tempering; about 2-3 table spoon for tempering lentels for 4-5 people. Furthermore, one can have boiled plane rice easily with temered lentels thus total intake of the oil per person is very little in actual terms.

And, tempering is done with very small quantity. Like, for four persons, you need merely a medim sized onion, a small tomato, 5-6 cloves of garlic, 1/2 inch of ginger besides dry spices. So, there is no need of much oil in any case and no oil would be left to use again either.

Rucola plus any kind of nice leaf, spring onions, sesame seeds, goji berries, roasted almonds, pecan nuts, dried cranberries, cherry tomatoes with some vinegar, oil and a pinch of salt, this is the best salad I was able to make so far. I sometimes drink a glass of lemon water before which in total makes for an extremely light and energizing digestion process. It feels like nothing is left unused.

If a lemon happens to be cut and squeezed for a beverage then of course, some of its juices are shed onto the salad as well. Salads are great and have quickly become an essential part of my diet but I meat frequently and quite often it’s really nice. But I suppose it’s very much the experience of eating another animal that pleases - even Kentucky Friend ‘Chicken’, including the vague nausea afterwards, can be enjoyable. It depends on the environment. Sometimes it’s better to spit on it than to breathe it in like you’re out on open sea.

It is good to squeeze the fresh lemon juice like this, and also if you have access to a juicer go ahead and juice the peel and some fresh ginger, then mix that with the squeezed lemon juice and some water. Extremely energizing.

Also you can get a therapeutic grade essential oil of lemon, place 2-3 drops in a glass of ice water… the effect is tremendous.
