one giant’s electron chair is another giant’s sandwich chair, and to some giants, an electron is more giant, and at least one of those giants is probably named Tiny

When you ask what separates chair from air, you are asking on what basis distinctions are made at all.

By using words at all, you are making distinctions. So there is no question of whether they are there, there they are.

But the question I understood you to be asking by pointing out the apparent arbitrariness of any given distinction was on what basis to make them at all.
