This is my recently made brownie recipe. It still needs some serious adjustment… Ah the joys of cooking…
Brownies
• 4 ounces chocolate baking bar
• 1/2 cup cold unsalted butter, cut into pieces
• 1/4 cup fine ground Coffee
• 1 cup brown sugar, packed
• 1-1/2 teaspoon vanilla extract
• 2 tablespoons Irish cream liqueur
• 2 large eggs
• 1 cup flour
• 1/4 teaspoon baking powder
• 1/4 teaspoon salt
• 1 pinch cayenne pepper
• Some semisweet chocolate chips
• Some Dark chocolate chips
• 3 strips of bacon
• a pinch of large finishing salt
• 1/2 cup of whiskey (+ more for sipping.,)
Cut bacon into 1/4’ pieces, cook in cast iron pan (10 1/4") until burnt around the edges. Crunchy is best. Pull out bacon onto paper towel to drain. Drain pan of grease, but do not wash, the grease helps make removing the brownies easier.

Sift or whisk flour, baking powder, salt and cayenne together in a small bowl. Set aside.

Bring your eggs to room temperature by gently submerging them in a glass of warm (not hot) water.

Break up the chocolate cooking bar, and the cut up cold butter and place in cast iron pan, over low heat. Keep mixture moving until all is melted into a smooth thick liquid. Once the mixture is melted, take it off the heat.

Add in brown sugar, stir until mixed.

Add in coffee, stir until mixed.

Add in irish cream, stir until mixed.

Add in vanilla extract, stir until mixed.

Once mixture is cool enough to stick finger in without burning, mix in eggs, one at a time, the goal is to not cook the eggs with the mixture, so make sure it is cool. If necessary, move to refrigerator or freezer for a few minutes to reduce temp.

Preheat oven to 350 degrees Fahrenheit.

Once fully preheated fold flour mixture into the chocolate mixture, until just incorporated. Do not over mix. Stir in bacon, slowly. Sprinkle chocolate chips and finishing salt on top spread evenly. Cook in oven, in cast iron pan, for roughly 30 minutes.

Once done, remove from oven and immediately poor 1/2 cup of whiskey over brownies and place in refrigerator or freezer for about an hour. Eat brownies…
